Armenia

Armenia is one of those countries where I knew exactly what I wanted to make when I started the project. I've had a recipe for cabbage dolma for a couple years now, from a food magazine that did a feature on Armenia, so it was something I was comfortable with and I knew I liked.


Usually dolmas are made with grape leaves, but it can also be made out of a variety of different leaves. Here I used cabbage leaves, since that's what the original recipe called for. Cabbage is also very cheap and easier to find, so that helps. The process is a bit long, as it involves carefully removing the leaves, boiling them 2-3 at a time until soft enough to fold, then stuffing them with the filling (veggie beef, onion, and rice), rolling them, and cooking them in a tomato sauce. The end result is super filling and comforting, while also very healthy.
