Today's entry comes a little late. I actually made this meal Sunday night but was too tired to write a blog post. I was also supposed to make this last Thursday but unfortunately I was in bed with food poisoning all day so I wasn't really feeling up for eating let alone cooking.

This is a traditional meal from Bolivia called silpancho. It's made from rice layered with a breaded cutlet, known as milanesa in South American, and fried egg, with some tomato and onion on one side and lightly fried potatoes on the other.

I used some veggie ground beef for the cutlet, which I seasoned and then mashed into patties and coated in bread crumbs before frying.



Traditionally this plate of food is made with just raw tomato and onion, but I'm not a huge fan of raw onion, so I let those sit in some rice vinegar for a little bit to create more of a pico de gallo and I think it helped a lot. I'm also glad I was able to use my cute cat plates since friends were visiting and all our larger plates were in the dishwasher.
