Andorra

Dinner from Andorra! Did you know that Andorra technically has two princes? One is the president of France, and the other is the Bishop of Urgell, which makes sense given its location in between France and Spain. Andorra also has the highest life expectancy in the world!


For this microstate, I cooked their national dish: escudella, which is widely eaten in the are of Catalonia in Spain. The main ingredient of escudella is a big meatball, which I re-created with veggie beef. I also added carrots and celery along with homemade veggie broth.


I also made traditional Catalan trinxat, made out of potato, cabbage, and veggie bacon. Kind of like Irish colcannon made into a kind of pancake.
