Belgium was a tiny bit more difficult to find recipes that were both 1) vegetarian and 2) healthy-ish. The second isn't really a requirement, but it's nice to not feel gross after a meal. Belgium's national dishes include mussels, waffles, and frites--since there's no way to make mussels vegetarian and I don't own a waffle maker, frites were an obvious choice. But I decided to make them in the oven instead of frying them, which maybe defeats the whole purpose of calling them "frites" aka "fries." I also decided on making endives au gratin, which is probably more of a French dish, but I used Belgian endives, so it counts! The endive was braised in vegetable broth, and topped with a delicious Gruyere cheese sauce. I served the two dishes with a green salad to make the potatoes and cheese just a little bit healthier.
